- boneless skinless chicken breasts1 lb
- olive oil2 tbsp
- yellow onion, diced1 medium
- garlic, minced3 cloves
- long-grain white rice, uncooked1 1/2 cups
- chicken broth3 cups
- broccoli florets3 cups
- shredded cheddar cheese2 cups
- milk1/2 cup
- salt1 tsp
- black pepper1/2 tsp

Instructions
- 1Season the chicken with salt and pepper, then cut into bite-size pieces.
- 2Heat olive oil in a large skillet over medium-high heat. Cook the chicken until lightly browned and cooked through, then remove to a plate.
- 3In the same skillet, sauté the onion for 3 minutes. Add the garlic and rice, stirring for 1 minute.
- 4Pour in the broth, bring to a simmer, cover, and cook for 15 minutes.
- 5Stir in the broccoli, cooked chicken, milk, and cheddar cheese. Cover again and cook 5 to 7 minutes, until the broccoli is tender and the rice is fully cooked.
- 6Let rest for 2 minutes before serving.
