Ingredients

  • boneless skinless chicken breasts1 lb
  • olive oil2 tbsp
  • yellow onion, diced1 medium
  • garlic, minced3 cloves
  • long-grain white rice, uncooked1 1/2 cups
  • chicken broth3 cups
  • broccoli florets3 cups
  • shredded cheddar cheese2 cups
  • milk1/2 cup
  • salt1 tsp
  • black pepper1/2 tsp

Instructions

  1. 1Season the chicken with salt and pepper, then cut into bite-size pieces.
  2. 2Heat olive oil in a large skillet over medium-high heat. Cook the chicken until lightly browned and cooked through, then remove to a plate.
  3. 3In the same skillet, sauté the onion for 3 minutes. Add the garlic and rice, stirring for 1 minute.
  4. 4Pour in the broth, bring to a simmer, cover, and cook for 15 minutes.
