- mushrooms, sliced14 oz
- garlic, minced4 cloves
- corn tortillas8
- olive oil2 tbsp
- ground cumin1 tsp
- smoked paprika1 tsp
- salt3/4 tsp
- avocado, sliced1
- lime1
- cilantro, chopped1/4 cup
- crumbled cotija or feta1/2 cup
Substitutions
- corn tortillas → small flour tortillas
- cotija or feta → vegan queso or avocado crema
- avocado → shredded cabbage
Instructions
- 1Heat olive oil in a skillet over medium-high heat. Add the mushrooms and cook until they start to brown, about 6 to 8 minutes.
- 2Stir in the garlic, cumin, paprika, and salt. Cook for 1 to 2 minutes more until fragrant and the mushrooms are well seasoned.
- 3Warm the tortillas in a dry pan or directly over a flame.
- 4Fill each tortilla with mushrooms, avocado, cilantro, and cheese. Squeeze lime over the top and serve immediately.
