  • bell peppers4 large
  • cooked chicken, chopped2 cups
  • eggs4 large
  • cheese, shredded2 cups
  • cooked rice2 cups
  • tomato sauce1 cup
  • onion, diced1/2 cup
  • Italian seasoning1 tsp
  • salt1 tsp
  • black pepper1/2 tsp

Instructions

  1. 1Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds and membranes.
  2. 2In a bowl, mix the chicken, rice, half of the cheese, onion, tomato sauce, Italian seasoning, salt, and pepper.
  3. 3Spoon the filling into the peppers and place them upright in a baking dish.
  4. 4Make a small well in the center of each pepper and crack an egg into it.
  5. 5Top with the remaining cheese, then cover loosely with foil and bake for 30 minutes.
  6. 6Remove the foil and bake 10 more minutes, until the eggs are set and the peppers are tender.
