- bell peppers4 large
- cooked chicken, chopped2 cups
- eggs4 large
- cheese, shredded2 cups
- cooked rice2 cups
- tomato sauce1 cup
- onion, diced1/2 cup
- Italian seasoning1 tsp
- salt1 tsp
- black pepper1/2 tsp

Instructions
- 1Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds and membranes.
- 2In a bowl, mix the chicken, rice, half of the cheese, onion, tomato sauce, Italian seasoning, salt, and pepper.
- 3Spoon the filling into the peppers and place them upright in a baking dish.
- 4Make a small well in the center of each pepper and crack an egg into it.
- 5Top with the remaining cheese, then cover loosely with foil and bake for 30 minutes.
- 6Remove the foil and bake 10 more minutes, until the eggs are set and the peppers are tender.
