Ingredients
- spaghetti or linguine12 oz
- garlic cloves10
- olive oil1/4 cup
- lemon1
- parmesan cheese, grated1/2 cup
- red pepper flakes1/4 tsp

Instructions
- 1Preheat the oven to 400°F (200°C). Cut the tops off the garlic cloves if roasting whole, drizzle with a little olive oil, wrap in foil, and roast until soft and golden, about 25 to 30 minutes.
- 2Cook the pasta in salted water until al dente. Reserve 1 cup of pasta water, then drain.
- 3Squeeze the roasted garlic into a bowl and mash it with olive oil, lemon zest, lemon juice, red pepper flakes, salt, and pepper.
- 4Toss the pasta with the garlic mixture, adding splashes of pasta water until glossy and well coated.
- 5Finish with parmesan and parsley, then serve warm.
