Ingredients

  • chicken breast1 1/2 lb
  • jasmine rice1 1/2 cups
  • pineapple chunks2 cups
  • bell pepper, sliced1 large
  • red onion, sliced1/2 medium
  • soy sauce1/4 cup
  • honey2 tbsp
  • lime juice2 tbsp
  • garlic, minced2 cloves
  • olive oil2 tbsp
  • salt1/2 tsp
  • black pepper1/4 tsp
  • green onions, sliced2

Instructions

  1. 1Cook the rice according to package directions and keep warm.
  2. 2In a bowl, whisk together the soy sauce, honey, lime juice, garlic, olive oil, salt, and pepper. Toss the chicken in half of the marinade and let sit while you prep the vegetables.
  3. 3Heat a grill pan or skillet over medium-high heat and cook the chicken until browned and fully cooked, about 5 to 7 minutes per side. Remove and let rest.
  4. 4In the same pan, cook the pineapple chunks, bell pepper, and red onion for 3 to 4 minutes until lightly caramelized.
  5. 5Slice the chicken and serve it over rice with the pineapple mixture and green onions. Drizzle with the remaining marinade if desired.
