Ingredients

  • tomatoes5 medium, chopped
  • garlic4 cloves, minced
  • spinach4 cups
  • eggs6
  • olive oil2 tbsp
  • onion1 medium, diced
  • cumin1 tsp
  • paprika1 tsp
  • saltto taste
  • black pepperto taste

Instructions

  1. 1Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 4 minutes.
  2. 2Stir in garlic, cumin, and paprika and cook for 30 seconds.
  3. 3Add tomatoes, salt, and pepper, then simmer for 12 to 15 minutes until thickened.
  4. 4Stir in spinach and cook just until wilted.
  5. 5Make 6 small wells in the sauce and crack in the eggs. Cover and cook until the whites are set and yolks are cooked to your liking, about 5 to 7 minutes.
  6. 6Serve immediately.
