Ingredients
- tomatoes5 medium, chopped
- garlic4 cloves, minced
- spinach4 cups
- eggs6
- olive oil2 tbsp
- onion1 medium, diced
- cumin1 tsp
- paprika1 tsp
- saltto taste
- black pepperto taste
Substitutions
- eggs → firm tofu cubes
- spinach → Swiss chard
- paprika → smoked paprika
- onion → shallot
Instructions
- 1Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 4 minutes.
- 2Stir in garlic, cumin, and paprika and cook for 30 seconds.
- 3Add tomatoes, salt, and pepper, then simmer for 12 to 15 minutes until thickened.
- 4Stir in spinach and cook just until wilted.
- 5Make 6 small wells in the sauce and crack in the eggs. Cover and cook until the whites are set and yolks are cooked to your liking, about 5 to 7 minutes.
- 6Serve immediately.
