  • rice1 1/2 cups
  • olive oil1 tablespoon
  • butter1 tablespoon
  • mushrooms, sliced12 ounces
  • shallot, minced1
  • garlic, minced2 cloves
  • vegetable broth3 cups
  • milk1/2 cup
  • parmesan cheese, grated1/3 cup
  • thyme1 teaspoon
  • salt3/4 teaspoon
  • black pepper1/2 teaspoon

Instructions

  1. 1Rinse the rice and set aside.
  2. 2Heat the olive oil and butter in a large skillet over medium heat. Add the mushrooms and cook until browned and their moisture has evaporated, about 6 to 8 minutes.
  3. 3Add the shallot and garlic and cook for 1 minute.
  4. 4Stir in the rice, broth, thyme, salt, and pepper. Bring to a simmer, cover, and cook on low for 18 to 20 minutes, stirring once or twice.
  5. 5When the rice is tender, stir in the milk and parmesan. Cook uncovered for 2 to 3 minutes until creamy and warmed through.
