- rice1 1/2 cups
- olive oil1 tablespoon
- butter1 tablespoon
- mushrooms, sliced12 ounces
- shallot, minced1
- garlic, minced2 cloves
- vegetable broth3 cups
- milk1/2 cup
- parmesan cheese, grated1/3 cup
- thyme1 teaspoon
- salt3/4 teaspoon
- black pepper1/2 teaspoon

Instructions
- 1Rinse the rice and set aside.
- 2Heat the olive oil and butter in a large skillet over medium heat. Add the mushrooms and cook until browned and their moisture has evaporated, about 6 to 8 minutes.
- 3Add the shallot and garlic and cook for 1 minute.
- 4Stir in the rice, broth, thyme, salt, and pepper. Bring to a simmer, cover, and cook on low for 18 to 20 minutes, stirring once or twice.
- 5When the rice is tender, stir in the milk and parmesan. Cook uncovered for 2 to 3 minutes until creamy and warmed through.
