Instructions
- 1Preheat the oven to 375°F (190°C).
- 2Heat olive oil in an oven-safe skillet and sauté the onion until soft.
- 3Add the spinach and cook until wilted.
- 4Whisk the eggs, milk, salt, and pepper together, then pour into the skillet.
- 5Sprinkle goat cheese and herbs over the top and cook on the stove for 2 minutes without stirring.
