Instructions

  1. 1Preheat the oven to 375°F (190°C).
  2. 2Heat olive oil in an oven-safe skillet and sauté the onion until soft.
  3. 3Add the spinach and cook until wilted.
  4. 4Whisk the eggs, milk, salt, and pepper together, then pour into the skillet.
  5. 5Sprinkle goat cheese and herbs over the top and cook on the stove for 2 minutes without stirring.
