Heat is the only tool that matters
Every cooking method — from roasting to steaming to deep-frying — is just a different way of applying heat to food. The temperature, the medium (air, water, fat), and the duration completely determine the result. Understanding this transforms the way you cook, because once you know why you are using a particular method, you can adapt it to anything.
You do not need to memorise physics. You just need to understand a few principles, and the rest follows logically.
Dry heat vs. moist heat
All cooking methods fall into one of two categories:
Dry-heat methods cook food in air or fat. They produce browning (the Maillard reaction), caramelisation, and crisp textures. Temperatures are high — typically above 150°C.
Moist-heat methods cook food in water or steam. The maximum temperature is limited to 100°C (the boiling point of water), so food stays tender and moist but never develops a crust.
Some methods combine both — braising, for example, starts with dry heat (searing) and finishes with moist heat (simmering in liquid).
Dry-heat methods explained
Roasting and baking
Both use hot air in an enclosed oven. The difference is mostly linguistic: we say "roast" for meat and vegetables, "bake" for bread, cakes, and pastry.
Hot air is a poor conductor of heat compared to water or fat, which is why roasting takes longer. But the sustained dry heat draws moisture from the surface of the food, creating the conditions for browning and crisping. That is why a roast potato has a golden, crunchy outside and a fluffy interior — the surface dried out enough to caramelise.
Tips for better roasting:
Grilling and broiling
Intense, direct heat from above (broiling) or below (grilling/barbecuing). The heat source is very close to the food, so temperatures are high and cooking is fast.
Grilling is ideal for thin cuts of meat, fish fillets, vegetables, and anything you want charred on the outside while staying juicy inside. The key is not to move the food too often — let the crust form before flipping.
Sautéing and pan-frying
Both use a hot pan with a thin layer of fat. Sautéing uses higher heat and keeps the food moving (the word comes from the French "sauter," meaning to jump). Pan-frying uses moderate heat and lets the food sit in contact with the pan longer, developing a golden crust.
When to sauté: stir-fries, quickly cooking diced vegetables, finishing pasta in a sauce.
When to pan-fry: browning a chicken breast, cooking a steak, making a crispy fish fillet.
The pan should be hot before you add the oil, and the oil should be hot before you add the food. If the food sizzles immediately, you are in the right zone. If it sits silently, the pan is not hot enough.
Searing
Searing is not a cooking method in itself — it is a technique. You apply very high heat to the surface of meat (or sometimes vegetables) for a short time to develop a deeply browned crust. The food is then finished with another method (roasting, braising).
Searing does not "seal in juices" — that is a myth. It creates flavour through the Maillard reaction. The crust is concentrated flavour, which is why a seared steak tastes richer than one that was gently poached.
How to sear properly:
Deep-frying
Food is fully submerged in hot fat (160–190°C). The high temperature rapidly dehydrates the surface, creating a crisp shell, while the interior cooks gently through steam generated by the food's own moisture.
Deep-frying is not as unhealthy as its reputation suggests — when done correctly. If the oil is hot enough, the food's moisture pushes outward and prevents oil from soaking in. If the oil is too cool, the food absorbs fat like a sponge.
Use a thermometer. The right temperature makes all the difference.
Moist-heat methods explained
Boiling and simmering
Boiling (100°C, vigorous bubbles) is aggressive. Use it for pasta, blanching vegetables, and cooking potatoes. Most other things should be simmered (85–95°C, gentle bubbles breaking the surface). Simmering is kinder to delicate proteins like fish and eggs, and extracts flavour from bones and aromatics without making the liquid cloudy.
Poaching
Gentler than simmering. The liquid (water, stock, wine) barely moves — you should see occasional bubbles rising from the bottom. Temperature is around 70–80°C.
Poaching is ideal for eggs (soft whites, runny yolk), fish (moist and tender), and fruit (pears in wine, peaches in syrup). The gentle heat prevents the protein from seizing up and becoming rubbery.
Steaming
Food is suspended above boiling water and cooked by the rising steam. The temperature is still 100°C, but the food never touches the water, so it retains more nutrients, texture, and colour.
Steaming is excellent for vegetables (broccoli, green beans, asparagus), fish, and dumplings. It is quick, clean, and hard to mess up. If you do not have a steamer, a colander set over a pot of boiling water with a lid on top works perfectly.
Combination methods
Braising
Braising starts dry and finishes wet. You sear the meat to develop a crust, then add liquid (stock, wine, tinned tomatoes) and cook slowly at a low temperature, usually covered, for a long time.
The low-and-slow approach breaks down tough connective tissue (collagen) in cheaper cuts of meat and converts it into gelatine, which is what makes a braise silky and rich. This is why a slow-cooked lamb shoulder falls apart while a quick-fried lamb chop stays firm.
Braising is the best way to cook cheap cuts: beef shin, pork shoulder, chicken thighs, lamb neck. They transform from tough to meltingly tender in two to three hours.
Stewing
Similar to braising, but the food is cut into small pieces and fully submerged in liquid. Stews are simmered gently on the hob or in the oven. The liquid becomes the sauce.
How to choose the right method
The cut of meat or type of vegetable tells you which method to use:
When in doubt, lower heat and longer time is more forgiving than high heat and speed. You can always add more heat; you cannot undo overcooking.
The takeaway
Once you understand that every cooking method is just a variation on applying heat through a medium, the mystery disappears. You stop following instructions blindly and start making choices: "This needs a crust, so I will sear it first. Then it needs to become tender, so I will braise it." That is the difference between following a recipe and understanding cooking.
